Milk tea at night…

There is nothing more perfect than a hot cup of milk tea at night. While I am doing some things, listening to mellow music, I always make sure I have a cup of milk tea on my desk.

For a reason my mind can only fathom, milk tea makes me feel calm and collected.

Mother of all comfort foods

Do you know what it is? It’s the Hearty Chicken Noodle Soup. I got this recipe from Oprah.com.

Chicken Noodle Soup

Ingredients

* 4 quarts homemade or canned chicken broth
* 1 3/4-pound cleaned whole chicken
* 6 large carrots , scrubbed, thinly sliced
* 2 medium onions , chopped
* 3 stalks celery , diced
* 2 Tbsp. minced fresh parsley
* 1 Tbsp. minced fresh dill
* 1/2 pound (8 ounces) medium egg noodles
* Salt
* Freshly ground pepper

Directions
In a large pot combine broth and chicken. Bring to a boil; reduce heat, cover, and simmer for 40 minutes, or until juices run clear. Remove chicken from pot and set aside until cool enough to handle. Strain broth. (Chicken and broth may be prepared to this point a day ahead and refrigerated.)

Return broth to pot and bring to a boil. Add carrots, onions, and celery. Simmer until vegetables are tender, about 20 minutes.

Shred meat from chicken, discarding skin and bones. Tear into small pieces. Add chicken meat back into pot along with herbs and noodles. Increase heat to medium-high and continue to cook until noodles are just tender, about 6 to 8 minutes. Season to taste with salt and freshly ground pepper.

Servings: Serves 8–10

Adobo

adobo

Adobo. It’s my mom’s go-to dish whenever she couldn’t think of anything to feed us. I remember we had adobo at least once every two weeks. Sometimes more. And there were even variations of it.

But for Filipinos, I guess we won’t ever say no to an adobo dish, no matter the way it is cooked. We love adobo! In fact, it may just be our national dish hehe

Champorado

Champorado

My mom would cook this for breakfast, especially if it’s raining. We call it champorado or chocolate porridge to others, if I am not mistaken. It’s a sticky rice concoction that is mixed with cocoa powder, sugar and peanut butter.

Yum!

My aunt cooked it the other day and we happily ate it.

One of my comfort foods… Champorado! Bow!

Pancit Canton

Pancit Canton has become a comfort food to me already. I do believe so does with my family. We have two choices for today. There’s Lucky Me Pancit Canton which is a quick cook instant noodle pack that can be bought for eight pesos in the country.

My sisters, brother and I always go for the original flavor mixed with the spicy hot one.

There’s also the Long Life Pancit Canton of Savory. This one we really, really love! Just take a look at the photo below and tell me if you didn’t drool over it…

For those who are not Filipinos or Chinese, Pancit Canton is served as a snack or as a substitute to rice. It’s like the local version of a pasta. And it is specially served during birthday celebrations as a symbol for long life.
